History and uniqueness

This cheese is characterized by its extremely elastic texture, rich aroma and mild taste. Ivory coloured and flat cheese is evenly covered with a velvet, white mould bark, and inside is soft, with a lot of unevenly formated small holes. The Brie Coburger cheese peel is sprayed with a white mould, which is called Penicillium candidum. This mould is used in the cheese production process to protect the cheese from other potentially harmful microorganisms. For many years Coburger as a cheese producer is among the internationally leading manufacturers of cheese. In 1927, following traditional recipes, was manufactured the first cheese of Coburger. The minimum requirement for each dairy farms is to produce milk according to the quality assurance standard "QM-Milch". The Corburger sets maximum value on the quality and safety products. Only approved milk is used for production, which is subject to the strictest controls.
