Tomme Noire Cantorel is a rustic cheese made from pasteurized milk from cows grazing in the Pyrenees. This cheese was first mentioned in the 12th century. It was served to the kings of France.
The cheese is elastic, 50% fat, cylindrical in shape, usually ivory in color. The cheese gets a light yellow color when matured for a longer time. The taste is creamy and slightly salty. This cheese is covered with black wax, which allows to keep the properties of the cheese unchanged throughout the shelf life. This cheese has PGI (protected geographical indication) status.
