Cheese Iberico al Romero

Semi-hard Spanish cheese, produced in Central Spain. Iberico is made from a blend of cows, sheeps, and goats milk. One of the most popular cheeses in Spain, this firm, oily cheese is mild, yet tasty and aromatic. The blend of milks allows it to obtain the grassy, herbaceous flavors of the goats and sheeps milk, while maintaining the smoothness of cows milk. The cheese also is covered with a great tasting, aromatic rosemary rind.

History and uniqueness

Cheese gourmets are especially fond of Iberico cheese covered with rosemary, otherwise - Iberico al Romero. The Iberico cheese is endowed with rosemary leaves at the end of maturation and is still left to rest. The aroma of rosemary is absorbed into the very cheese, which gives a rather strong taste with an aftertaste of the lemon peel. This cheese is light and very aromatic. The flavour is rich and lush, and the mixture of three different types of milk gives to this cheese the taste of grass and herbs.
