This white, cream-coloured cheese is distinguished by its uniqueness, using the red culture (Brevibacterium linens bacteria) from which the cheese gained the bark, which colour is close to pink. Brevibacterium linens bacteria provides an opportunity to reveal the peculiarity of the cheese. For many years Coburger as a cheese producer is among the internationally leading manufacturers of cheese. In 1927, following traditional recipes, was manufactured the first cheese of Coburger. The minimum requirement for each dairy farms is to produce according to the quality assurance standard "QM-Milch". The Corburger sets maximum value on the quality and safety products. Only approved milk is used for production, which is subject to the strictest controls.
